Mixed Vegetables Quinoa Salad

Ingredients:
  • 1 Pack of Plein Soleil Mixed Vegetables
  • 1 Cup of cooked quinoa
  • 1 lemon juice
  • 1 Teaspoon of dried oregano
  • 2 Tablespoon of butter
  • 2 Cloves of minced garlic
  • Salt & pepper
  • 1/4 cup of olive oil
  • Ground ginger
  • 2 Teaspoons of lemon zest

Sauce:

  • Salt & pepper
  • 1/4 cup of olive oil
  • Ground ginger
  • 2 teaspoons of lemon zest
  • 1 teaspoon of dried oregano
Preparation:
  1. Combine all sauce ingredients in bowl and mix.
  2. Boil Plein Soleil Mixed Vegetables and transfer to ice bath.
  3. Heat pan, add butter, garlic, Mixed Vegetables, salt & pepper and lemon zest.
  4. Put in a plate and mix with quinoa.
  5. Add sauce, sprinkle dried oregano and serve.
